Various disciplines are involved in the overall nutritional care of residents. Designation of responsibility, communication of functions, and knowledge of proper procedures are instrumental in promoting quality outcomes.

This manual is Ohio specific and has been developed using the following resources as the basis for policies to ensure optimal quality of care and service:

  • Centers for Medicare and Medicaid Services (CMS) laws and regulations for nursing homes
  • FDA Food Code
  • The Ohio Administrative Code, Chapters 3701-17
  • Ohio Uniform Food Safety Code

The manual has been divided into twelve (12) sections:

  • Section 1 – Nutritional Care/Diets
  • Section 2 – Documentation
  • Section 3 – Clinical Consultation
  • Section 4 – Menus, Food Production & Preparation
  • Section 5 – Dining Services
  • Section 6 – Sanitation and Infection Control
  • Section 7 – Food Safety

  • Section 9 – Personnel and Orientation
  • Section 10 – Resource Management
  • Section 11 – Disaster Preparedness
  • Section 12 – Quality Assurance

Relevant policies and procedures are found within each section of the manual.  Corresponding sample forms are located behind the applicable policy.  In the event the form is cross-referenced in another policy in the manual, the original policy and its location is referenced.

The terminology of “Nutrition Professional” has been utilized throughout this policy manual.  Nutrition Professional refers to a Registered Dietitian, Diet Technician Registered, Dietetic Technician and/or Nutrition Associate/Assistant.

Since dietitian licensure laws vary from state to state, it is recommended to verify credentialing statutes for the state in which your health care facility is located.
